  • 2 tablespoons sriracha adjust to taste; contributes heat
  • 1 tablespoon honey or sugar; balances spice
  • 1 tablespoon rice vinegar or lime juice; adds acidity
  • 1 tablespoon chopped green onions optional, for garnish; adds freshness
  • 1 teaspoon sesame seeds optional, for garnish; adds texture

Instructions
 

Preparation

  • Cut the boneless, skinless chicken breasts or thighs into 1 to 1.5-inch chunks.
  • Place the chicken chunks into a large bowl. Drizzle in the olive oil, and sprinkle with salt, black pepper, garlic powder, and smoked paprika, if using. Toss together until the chicken is evenly coated.
  • Soak the wooden skewers in water for about 30 minutes to prevent burning while grilling.
  • Thread the marinated chicken chunks onto the skewers, leaving a small gap between each piece.

Cooking

  • Preheat your grill or grill pan over medium heat.
  • Place the chicken skewers on the grill and cook for 12-15 minutes, turning occasionally until cooked through and lightly charred.
  • In a bowl, combine the mayonnaise, sriracha, honey, and rice vinegar. Whisk until smooth and adjust sriracha as needed.

Serving

  • Remove the skewers from heat and serve warm, drizzling the sauce over or serving it on the side for dipping.
  • Sprinkle with chopped green onions and sesame seeds for added flavor and texture, if desired.

Notes

For best results, marinate chicken long enough for flavors to infuse. Adjust sauce ingredients to suit taste. Leftover skewers can be stored in the fridge for 3-4 days or frozen.
