Preparation

  • Heat a large skillet over medium heat with a drizzle of olive oil until it shimmers.
  • Add the mirepoix to the skillet and cook, stirring occasionally, until softened and fragrant, about 5-7 minutes.
  • Add the shredded chicken and stir to combine, warming the chicken through.
  • Pour in the chicken broth, stirring gently until well mixed. Bring to a gentle simmer.
  • Add the rice into the skillet, ensuring it is evenly distributed and submerged. Cover with a lid and reduce heat to simmer.
  • After 15-20 minutes, uncover and pour in the heavy cream, stirring to combine.
  • Season with salt and pepper to taste, giving a final gentle stir before serving.

Notes

Store leftovers in an airtight container for up to three days in the fridge or freeze for up to three months. Reheat gently, adding a splash of broth or cream to restore creaminess.
