Ingredients
  

For the marinade

  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 3 cloves Garlic, minced
  • 1 tsp Paprika
  • 1 tsp Dried oregano
  • to taste Salt and pepper

For the kabobs

  • 1.5 lbs Chicken breast, cut into cubes
  • 1 Red bell pepper, chopped into squares
  • 1 Yellow bell pepper
  • 1 Red onion, cut into chunks
  • to taste Cherry tomatoes (optional)
  • to taste Fresh parsley (for garnish)
  • to taste Extra lemon wedges (for garnish)
  • to taste A sprinkle of chili flakes (optional)

Instructions
 

Preparation

  • Cut the chicken breast into even cubes, about an inch in size.
  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, and pepper. Stir until well blended.
  • Add chicken cubes to the marinade and stir until evenly coated. Let sit for 20 to 30 minutes.
  • Chop bell peppers and red onion into bite-sized pieces.

Cooking

  • Assemble the skewers by alternating chicken and vegetable pieces.
  • Grill the skewers over medium heat, turning occasionally, until the chicken is golden and juices run clear.
  • Serve warm alongside fluffy rice, fresh salad, or warm flatbread.

Notes

Use even-sized pieces for uniform cooking. Soak wooden skewers to prevent burning. Fresh herbs enhance flavor.
