Preparation

  • In a spacious mixing bowl, combine the cooked chicken. Use either shredded or diced chicken, based on your preference for texture.
  • Add the mayonnaise to the bowl with the chicken and stir until the chicken is completely coated.
  • Fold in the diced celery gently, preserving their texture.
  • Add the diced red onion or shallots and mix to ensure even distribution.
  • Sprinkle in the sliced green onions or chives and mix gently.
  • Stir in the Dijon mustard to add a mild tang.
  • Add the lemon juice, kosher salt, and black pepper, tasting as you go to adjust the seasoning.
  • Once everything is combined, give the chicken salad a final mix to ensure all ingredients are evenly distributed.

Notes

For best results, use fully cooked, chilled chicken. Allow time for the salad to chill before serving, and feel free to experiment with additional flavors such as nuts or dried fruit.
