  • 3 pieces boneless skinless chicken thighs
  • 12 oz farfalle pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded parmesan
  • 1 cup diced spinach Fresh spinach works best
  • ¼ cup diced sun-dried tomatoes

Seasonings

  • ¾ tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning plus 1 additional tbsp for later
  • ¾ teaspoon salt plus ½ tsp for later
  • ¼ teaspoon black pepper

Sauce Ingredients

  • 2 tbsp butter
  • 2 tbsp dried shallots
  • 2 tbsp minced garlic
  • 1 tbsp minced onion
  • 3 tbsp gluten-free flour to thicken the sauce
  • 2 tbsp tomato paste
  • 2 tbsp sun-dried tomato oil

Garnish

  • to taste Chopped fresh basil for garnish

Instructions
 

Preparation

  • Season the chicken thighs with smoked paprika, Italian seasoning, salt, and black pepper.
  • Heat the sun-dried tomato oil in a skillet over medium heat and cook the chicken for 5-7 minutes per side until browned.
  • Remove the chicken from the skillet and let it rest.

Making the Sauce

  • Melt the butter in the same skillet and add the dried shallots, minced garlic, and minced onion, stirring until the onion is translucent.
  • Sprinkle gluten-free flour over the shallot mixture, stir to combine, and let it cook for a minute.
  • Gradually whisk in the chicken broth until no lumps remain.
  • Stir in the heavy cream, followed by parmesan, sun-dried tomatoes, and tomato paste. Mix until the cheese is melted and the sauce is creamy.

Combining

  • Chop the rested chicken and return it to the skillet with the diced spinach, additional Italian seasoning, smoked paprika, and salt. Mix until the spinach wilts.
  • Cook the farfalle pasta according to package instructions, then drain and toss with the chicken mixture in the skillet.

Serving

  • Serve in bowls, garnishing with fresh basil.

Notes

For meal prep, this dish is great as leftovers and can be stored in airtight containers. If it's too thick when reheating, add a splash of chicken broth or cream.
