Instructions
 

Preparation

  • In a medium pot, heat the olive oil over medium heat until it shimmers. Add the chopped onion and cook until translucent, about a few minutes.
  • Add the minced garlic to the pot and cook for about a minute, stirring frequently.
  • Stir in the Arborio rice, coating it with oil and the onion mixture. Cook until slightly translucent around the edges.

Cooking

  • Begin adding the chicken broth one ladle at a time, stirring regularly and allowing it to absorb before adding more.
  • After about 10 minutes, add the shredded cooked chicken and stir until heated through.
  • Once the rice is al dente and creamy, mix in the heavy cream and grated Parmesan cheese until the cheese melts.
  • Finally, stir in the dried thyme and basil. Serve hot, garnished with fresh parsley.

Notes

Stir frequently to achieve creaminess, and ensure broth is warm before adding. Leftovers can be reheated with a splash of broth or cream.
