Ingredients
  

For the Chicken

  • 2 large chicken breasts (boneless and skinless)
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 tablespoons butter for browning the chicken
  • 2 tablespoons oil
  • 2 tablespoons minced garlic

For the Sauce

  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan (grated)
  • 1/2 teaspoon red pepper flakes adjust for spice preference
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/3 cup sundried tomatoes (chopped)

  • Fresh basil for garnish
  • Grated parmesan for garnish

Instructions
 

Preparation

  • In a shallow dish, combine the all-purpose flour with salt, pepper, garlic powder, and paprika.
  • Mix the flour mixture until the spices are well distributed.

Cooking the Chicken

  • Heat the oil and butter in a large skillet over medium-high heat.
  • Coat the chicken breasts in the flour mixture and shake off any excess.
  • Carefully place the chicken in the skillet, cooking for about 3-4 minutes on each side until golden brown and cooked through.

Making the Sauce

  • In the same skillet, add the minced garlic and cook for about 1-2 minutes until fragrant.
  • Pour in the chicken broth and heavy cream. Stir to combine, scraping any flavorful bits from the skillet.
  • Gradually add the grated parmesan, red pepper flakes, oregano, and thyme, stirring until the cheese melts and the sauce thickens.
  • Add the chopped sun-dried tomatoes into the sauce and let it simmer for about 5 minutes.

Combining

  • Return the cooked chicken to the sauce and spoon sauce over it. Let it sit on low heat for 10 minutes.

Serving

  • Garnish with fresh basil and grated parmesan before serving.
  • Serve the dish warm over pasta, rice, or potatoes.

Notes

For best results, ensure chicken is well-coated, avoid overcrowding in skillet, and allow sauce to simmer properly. Freshly grated parmesan yields better melting and flavor.
