Preparation

  • Season the chicken with salt, black pepper, garlic powder, onion powder, and paprika. Set aside.

Cooking Chicken

  • In a large skillet, heat olive oil and butter over medium heat. Add the chicken and sear for 5-7 minutes on each side until golden brown.

Making the Sauce

  • Remove the chicken and add diced onion to the skillet. Sauté until translucent, about 3-5 minutes.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth and bring to a gentle simmer while scraping the bottom of the skillet.
  • Slowly add heavy cream and stir to combine, then add thyme, parsley, salt, and pepper.
  • Return chicken to the skillet, reduce heat to low, and simmer for 10-15 minutes.

Cooking the Rice

  • In a separate pot, bring water or broth to a boil. Add rice, reduce to low, cover, and cook for 15-20 minutes.

Final Steps

  • If a thicker sauce is desired, mix cornstarch with water and stir into the sauce, simmering until thickened.
  • Serve the creamy chicken over rice and garnish with parsley.
