  • 1 teaspoon onion powder

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • to garnish Fresh parsley, chopped

Instructions
 

Preparation

  • Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper. Ensure an even coating and let sit for enhanced flavor.
  • Heat olive oil in a skillet over medium heat. Add seasoned chicken breasts and sear for a few minutes on each side until golden brown.
  • Remove browned chicken from skillet and set aside. In the same skillet, add rice and stir for a minute to toast slightly.
  • Pour in chicken broth with 1/2 teaspoon of salt. Stir rice and nestle seared chicken back into skillet. Cover and simmer.

Sauce Preparation

  • In a separate saucepan, melt unsalted butter over medium heat. Add flour and whisk to form a smooth paste.
  • Gradually pour in whole milk and 1/2 cup of chicken broth while whisking to prevent lumps. Cook until sauce thickens.
  • Stir in the additional garlic powder and thyme. Add shredded cheddar and grated Parmesan, allowing cheese to melt.

Combining

  • Once chicken and rice are cooked, pour creamy cheese sauce over chicken and rice in the skillet. Stir gently to coat.
  • Garnish with fresh chopped parsley before serving.

Notes

Pair with a green salad or steamed vegetables for extra color and nutrients. Store leftovers in an airtight container for up to 3-4 days.
