Ingredients

Main Ingredients

  • 2.5 to 3 lbs boneless skinless chicken thighs (about 8 thighs)
  • 2 Tbsp avocado oil
  • 2 tsp sesame oil
  • 1 Tbsp fish sauce
  • 5 cloves garlic, minced
  • 2 Tbsp pure maple syrup
  • ¼ cup coconut aminos
  • 2 tsp sriracha (optional)
  • 3 Tbsp rice vinegar
  • ¼ tsp sea salt (to taste)

Instructions

Preparation

  • Preheat your oven to a moderate temperature. Gather ingredients and prepare the marinade by combining the avocado oil, sesame oil, fish sauce, minced garlic, maple syrup, coconut aminos, sriracha (if using), rice vinegar, and a pinch of sea salt in a mixing bowl.
  • Place the chicken thighs in a baking dish. Drizzle with oil if desired. Pour the marinade over the chicken, ensuring each piece is well coated and massage it into the meat for even distribution.
  • Let the chicken sit while the oven warms up. This resting time helps the thighs absorb flavors from the marinade.

Cooking

  • Once the oven is ready, place the baking dish inside. Cook the chicken until juicy and tender, with a beautiful golden color and an irresistible aroma.
  • Remove the chicken from the oven and let it rest for a few minutes before serving.

Notes

For deeper flavor, marinate chicken thighs longer. For more spice, increase sriracha or add red pepper flakes. Allow leftovers to cool before storing to retain moisture.
