  • 1 medium zucchini, sliced into thick rounds optional, for added moisture and veggie goodness

Instructions
 

Preparation

  • In a mixing bowl, combine the olive oil, fresh lemon juice, red wine vinegar, minced garlic, dried oregano, salt, black pepper, and paprika if using. Whisk together until well blended.
  • Add the chicken cubes to the bowl with the marinade and toss to coat thoroughly. Cover or transfer to a resealable bag and marinate for at least 30 minutes.
  • Prepare the optional vegetables by chopping them into large pieces.

Assembly and Cooking

  • Soak wooden skewers in water for about 30 minutes. Thread the marinated chicken onto the skewers, alternating with onion, bell pepper, or zucchini if using.
  • Preheat the grill or grill pan over medium-high heat. Place the assembled kabobs on the hot surface.
  • Cook the kabobs for about 10-15 minutes, turning occasionally, until the chicken is fully cooked through.
  • Remove the kabobs from the grill and let them rest for a few minutes before serving.
