Ingredients
  

For the Chicken

  • 750 g boneless skinless chicken thigh fillets
  • 1/2 tsp thyme dried
  • 1/2 tsp rosemary dried
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cracked pepper
  • 1 tsp salt

For the Sauce

  • 4 tbsp olive oil For cooking chicken
  • 30 g salted butter
  • 4 cloves garlic roughly chopped
  • 250 g button mushrooms sliced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1/2 cup shredded parmesan cheese To sprinkle on top

Preparation

  • In a bowl, mix thyme, rosemary, garlic powder, onion powder, cracked pepper, and salt.
  • Rub this seasoning mixture evenly over the chicken thighs.

Cooking

  • Heat olive oil in the skillet over medium-high heat.
  • Add the seasoned chicken thighs and cook until golden brown on both sides. Remove from the skillet.
  • Melt salted butter in the same skillet and sauté chopped garlic until fragrant.
  • Add sliced mushrooms and cook until tender and browned.
  • Pour in chicken stock and scrape the skillet's bottom for additional flavor.
  • Return chicken to the skillet and nestle in among the mushrooms.
  • Gradually stir in heavy cream and simmer until thickened and chicken is cooked through.
  • Sprinkle shredded parmesan cheese on top and stir gently until melted.

Notes

This dish pairs well with rice or mashed potatoes. Store leftovers in the fridge for up to three days. Reheat gently with a splash of chicken stock if necessary.
