  • 2 boneless chicken breasts 2 boneless chicken breasts (9oz/250g each) Ensure they are dry before applying flour.
  • 1/4 cup 1/4 cup plain flour (40g) For coating the chicken.
  • 1/2 cup 1/2 cup chicken stock (120ml) Adds moisture and flavor.
  • 6 tbsp 6 tbsp unsalted butter (90g), divided Use half for cooking and half to finish the sauce.
  • 2 cloves 2 cloves garlic, minced Adds depth of flavor.

Preparation

  • Pound the chicken breasts to an even thickness and season with salt and pepper.
  • Coat the chicken breasts in flour, shaking off excess.

Cooking

  • Melt half of the butter in a large skillet over medium heat until bubbly but not brown.
  • Place chicken in the skillet and sear without moving for a few minutes until golden brown.
  • Flip the chicken, reduce heat slightly, and add minced garlic.
  • Pour in the chicken stock and deglaze the pan, stirring gently.
  • Continue cooking, basting occasionally with the sauce until chicken is cooked through and sauce thickens.
  • Add the remaining butter to the skillet and swirl until melted before serving.

Notes

For maximum flavor, allow the butter to melt slowly and avoid browning. Baste the chicken during cooking for moisture. Add lemon juice at the end for extra flavor.
