Preparation

  • Begin by cutting the chicken breast into small, bite-sized pieces for even cooking and easy eating.
  • In a skillet, heat the olive oil over medium heat until it shimmers.
  • Add the chicken pieces to the skillet and cook, stirring occasionally, until fully cooked through, about 5 to 7 minutes.
  • While the chicken cooks, add the greens, red onion, tomatoes, cucumber, avocado, and corn to a large mixing bowl.
  • Once the chicken is cooked, allow it to cool slightly before adding to the salad ingredients.
  • In a separate bowl, combine the Greek yogurt, garlic, lemon juice, chopped onion, and Dijon mustard to prepare the dressing.
  • Pour the dressing over the salad mixture and toss gently to coat.
  • Fold in the fresh herbs and season with sea salt and pepper to taste.

Notes

For best results, use fresh herbs and allow the cooked chicken to cool before mixing it into the salad to maintain crispness. Adjust the dressing to taste.
