Preparation

  • Start by preheating your oven to 400°F (200°C). Pat the chicken thighs dry with paper towels to help them brown better in the oven.
  • In a mixing bowl, combine the olive oil, minced garlic, thyme, rosemary, lemon juice, soy sauce, balsamic vinegar, and honey. Stir until all ingredients are well-blended.
  • Place the chicken thighs in a baking dish, skin side up. Pour the marinade over the chicken, ensuring it coats them evenly. Massage the marinade into the meat gently.
  • If time permits, let the chicken marinate for at least 30 minutes at room temperature or longer in the refrigerator.

Cooking

  • Once marinated, transfer the dish to the oven and bake the chicken thighs until they are thoroughly cooked and the skin turns a rich golden color.
  • Remove the baking dish from the oven and let the chicken rest for a few minutes before serving.

Notes

Leftovers can be enjoyed in sandwiches or wraps. Store any leftover chicken in the refrigerator for 3-4 days or freeze for up to 3 months.
