  • 2 cups cooked shredded chicken Rotisserie chicken is a great option
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika optional
  • 1 can enchilada sauce (15 ounces) red or green
  • ½ cup sour cream or plain Greek yogurt nutritional yeast for a dairy-free option
  • 8 small flour or corn tortillas
  • 2 cups shredded cheese Mexican blend or your favorite like cheddar or Monterey Jack
  • ½ cup corn kernels optional
  • ½ cup black beans, rinsed optional
  • Salt and pepper to taste

  • Fresh cilantro
  • Lime wedges

Preparation

  • Start by heating the olive oil in a large skillet over medium heat. Once the oil is hot, add the finely chopped onion and sauté it until it becomes translucent and fragrant, about a few minutes.
  • Toss in the minced garlic, cooking just until it’s aromatic.
  • Stir in the cooked shredded chicken, ground cumin, and smoked paprika (if using). Gently combine, ensuring the chicken is well coated with the spices.
  • Allow this mixture to cook long enough for all the flavors to meld.
  • Remove the skillet from heat and stir in the enchilada sauce along with sour cream or plain Greek yogurt until well combined.

Assembly

  • Preheat your oven to a suitable temperature.
  • Take a tortilla and spoon a portion of the chicken mixture onto it. You can add optional corn or black beans if desired.
  • Roll the tortilla tightly around the filling, and place it seam-side down in a baking dish. Repeat this with all tortillas.
  • Pour any remaining enchilada sauce over the top and sprinkle the shredded cheese evenly over the sauce.

Baking

  • Place the baking dish in the oven and bake until the cheese is melted and golden brown. The cheese should be bubbling and slightly crisp on top.

Notes

Use leftover chicken for convenience. Warm tortillas to prevent tearing. Feel free to add extra vegetables or beans. Avoid overstuffing to ensure easy rolling.
