Preparation

  • Preheat your oven to 375°F (190°C). Lightly spray a baking dish with cooking spray.
  • In a mixing bowl, combine the olive oil, lemon juice, lemon zest, kosher salt, pepper, minced garlic, dried oregano, and paprika. Whisk together to create a marinade.
  • Place the chicken thighs in the baking dish and pour the marinade over them, ensuring they are well coated.

Cooking

  • Bake the chicken in the preheated oven until cooked through, about 35-45 minutes, or until juices run clear when pierced.
  • Let the chicken rest for a few minutes after removing it from the oven.

Finishing

  • Sprinkle chopped parsley over the chicken and serve with lemon wedges.

Notes

For best flavor, marinate the chicken for at least 30 minutes, or overnight if possible. Allow it to come to room temperature before baking.
