  • 1 tsp. dried rosemary
  • 1 tsp. dried oregano
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. kosher salt
  • 0.5 tsp. black pepper
  • 0.5 tsp. paprika
  • 0.25 tsp. crushed red pepper
  • 0.25 cup chicken broth or water Helps keep the chicken moist.
  • 1 small lemon, sliced 1/4-in. thick Provides acidity and brightens the dish.
  • 3 Tbsp. unsalted butter, sliced into 4 pieces Adds richness to the dish.

Preparation

  • Prepare the chicken thighs by trimming off any visible fat and place them in the slow cooker.
  • Sprinkle the dried thyme, rosemary, oregano, garlic powder, onion powder, kosher salt, black pepper, paprika, and crushed red pepper evenly over the chicken.
  • Pour in the chicken broth or water.
  • Layer the lemon slices on top of the chicken.
  • Place the slices of butter on top of the lemon.
  • Cover the slow cooker and let it cook for several hours until the chicken is tender and falls apart with a fork.

Notes

Serve over hot cooked rice, and pair with steamed vegetables or a fresh salad. For added richness, sprinkle fresh parsley or serve with garlic bread. Leftovers can be used in wraps or salads.
