  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 cups fresh cheese tortellini (or ravioli)
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp crushed red pepper flakes adjust to taste
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp fresh basil or parsley, chopped
  • Salt and black pepper to taste

Preparation

  • Start by melting the butter in a large pot over medium heat.
  • Add the bite-sized chicken pieces and cook until the chicken is no longer pink, stirring occasionally.
  • Add the minced garlic and crushed red pepper flakes to the pot and stir well.
  • Once the garlic is aromatic, pour in the chicken broth and bring to a gentle simmer.
  • Add the fresh cheese tortellini into the pot and stir gently. Cook until the tortellini is tender.
  • Pour in the heavy cream and add the grated Parmesan cheese. Stir until combined into a creamy sauce.
  • Season with salt and black pepper to taste, and finish with chopped fresh basil or parsley.

Notes

For best texture, use fresh tortellini. Adjust the crushed red pepper flakes for spice preference. Stir frequently while cooking to prevent sticking.
