Preparation

  • Preheat the oven to 400°F (200°C) to ensure it’s hot when the chicken goes in.
  • In a mixing bowl, combine the olive oil, kosher salt, black pepper, garlic powder, onion powder, smoked paprika, ground cumin, and cayenne pepper until it forms an even paste.
  • Massage the spice mixture all over the boneless chicken thighs, ensuring each piece is thoroughly coated.

Cooking

  • Transfer the seasoned chicken thighs onto a baking sheet in a single layer, allowing space between each piece.
  • Bake in the preheated oven for 25-30 minutes or until the chicken is tender and the internal temperature reaches 165°F (74°C).
  • Remove the baking sheet from the oven, and let the chicken rest for a few minutes before serving.

Notes

For extra crispiness, consider broiling the chicken for the last couple of minutes. Leftovers can be shredded for salads, tacos, or served with sides like rice or quinoa.
