Preparation

  • Gather all your ingredients in a mixing bowl.
  • Combine ranch dressing, grated parmesan cheese, minced garlic, olive oil, dried parsley, black pepper, garlic powder, and lemon juice, stirring until smooth.
  • Add cubed chicken to the marinade, ensuring each piece is well-coated.
  • Let the chicken marinate in the fridge for at least a few minutes.

Threading Skewers

  • Soak wooden skewers in water for about 30 minutes to prevent burning during cooking.
  • Thread marinated chicken pieces onto skewers, aiming for 4–6 pieces per skewer.

Cooking

  • Cook the skewers by grilling, baking, or broiling until the chicken is fully cooked and golden.
  • Let the skewers rest for a couple of minutes before serving.

Notes

You can serve these skewers over rice or quinoa or with a salad. They also make great leftovers!
