Instructions
 

Preparation

  • Start by heating the olive oil in a skillet over medium heat. Wait for the oil to shimmer before adding the diced onion.
  • Cook the onion until softened and translucent, then add the chopped garlic and sauté for about 30 seconds.
  • Add the ground chicken and break it apart with a wooden spoon. Cook until no longer pink.
  • Season with kosher salt and black pepper to taste.
  • Incorporate the chili garlic sauce followed by soy sauce and brown sugar, stirring until dissolved.
  • Add toasted sesame oil and chicken broth, mixing to combine.
  • In a small bowl, mix cornstarch with water until smooth, then add to the skillet and stir.
  • Cook together for a couple of minutes until the sauce thickens.
  • Once done, remove from heat and garnish with chopped scallions and sesame seeds.

Notes

Great served over steamed rice or in lettuce wraps. Can adjust the heat by varying chili garlic sauce.
