  • 1 packet taco seasoning infuses flavor with spices

Preparation

  • Begin by browning the ground beef or turkey in a skillet over medium heat until it is no longer pink. Drain any excess fat.
  • In the slow cooker, add the drained black beans.
  • Add the can of diced tomatoes, including the juices.
  • Add the frozen mixed vegetables or fresh veggies, chopped into bite-sized pieces.
  • Introduce the diced potatoes to the slow cooker.
  • Sprinkle in the chopped onion.
  • Add the taco seasoning and mix everything well.
  • Season with salt and pepper to taste.
  • Cover and cook on low for 6 to 8 hours.
  • About 10-15 minutes before serving, sprinkle shredded cheese on top and cover again.

Notes

Letting the casserole sit for a few minutes after cooking lets the flavors settle. Adjust the vegetables based on what you have on hand.
