  • 4 pieces chicken breasts Boneless, skinless
  • 1 tablespoon olive oil or avocado oil For searing
  • 1 teaspoon paprika
  • 1 teaspoon salt Divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 ounces cream cheese Softened
  • 1/4 cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 1/2 cups chopped fresh spinach
  • 1 teaspoon garlic Minced
  • 1/2 teaspoon red pepper flakes

Preparation

  • Preheat your oven to 375°F (190°C). Carefully slice a pocket into the side of each chicken breast.
  • In a mixing bowl, combine the cream cheese, grated Parmesan, and mayonnaise until smooth. Fold in the spinach, minced garlic, garlic powder, onion powder, red pepper flakes, and half of the salt.
  • Fill each chicken breast pocket with the spinach mixture and season the exterior with paprika, remaining salt, and oil.

Cooking

  • In a skillet, heat a small amount of oil over medium heat and sear the stuffed chicken for a few minutes on each side until lightly browned.
  • Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through.

Resting

  • Allow the chicken to rest for a few minutes before slicing and serving.

Notes

Use fresh spinach for the best texture and flavor. Consider varying the filling with herbs for different flavor profiles.
